Cosette Fakih El Khoury is highly qualified and experienced, with a strong background in the field of nutrition and a passion for research and teaching and mentoring students. Her research interests include studies about the impact of diet on chronic disease, nutritional considerations among vulnerable populations, malnutrition diagnosis, and the development of mHealth solutions in dietetics. Her research has been published in leading peer-reviewed journals. She is also an Editorial board member of the Journal of Parenteral and Enteral Nutrition (ASPEN-JPEN) and a regular reviewer for the Journal of Medical Internet Research (JMIR). She is also an experienced educator and a clinical preceptor. She has expertise in the accreditation of nutrition and dietetics programs across multiple universities.
